Fish Soup (Maeuntang)

This certainly is a delightful mix of aromatic and mouthwatering flavors.

Preparation time: 30 minutes

Cook time: 1 hour

Servings: 4

Ingredients:

Main

4 large shrimp, head and intestines removed

1 red snapper, scales, fins and guts removed, chunked

Stock

4-5 clams

2 shiitake mushrooms

6-7 cups of water

1 cup of thinly sliced korean radish

Dried kelp

Sauce

7 garlic cloves

2 tablespoons of hot pepper flakes

2 tablespoons of fish sauce

2 tablespoons of cooking wine

1 tablespoon of hot pepper paste

1/2 tablespoon of ginger

1/2 medium onion

Vegetables

Edible chrysanthemum leaves, cut into strips

Water dropwort, cut into strips

Enoki mushrooms, bottom part, washed and split

1 green chili pepper, sliced

Green onions, sliced

1 red chili pepper, sliced

1/2 teaspoon of salt

Directions:

1. Soak the mushrooms for 3-4 hours in warm water and then cut into bite-sized lengths.

2. Soak the clams for at least 3-4 hours in cold salted water. Wash and keep aside.

3. Prepare the sauce by grinding the garlic, pepper flakes, pepper paste, ginger, fish sauce, onion, wine in a food processor for about a minute. Keep aside.

4. Put the mushrooms, kelp, water and radish in a pot. Boil for 20 minutes over high heat, then remove kelp.

5. Add the shrimp, fish and clams.

6. Add the sauce and boil for 30 minutes over medium heat.

7. Add the salt and vegetables. Allow to boil for some minutes and serve.
